Ingredients
- 2 medium zucchini (or 1 large)
- pasta or rice
- 2 tomatoes
- 2 cloves garlic
- 1 green peppers
- 1 medium onion
- chopped parsley
- 50 gr grated Parmesan
- salt and pepper
- 200 ml chicken stock
Instructions
- Cut zucchini clean inside with a spoon and put salt in small amount. Boil pasta / rice and place a layer in zucchini.
- Chopped onion, peppers and tomatoes, then place them over pasta / rice. Sprinkle parmesan and chopped parsley.
- Pour broth into pan and place the zucchini. Put in the oven at 200 degrees for 45-50 minutes.
- Serve with sour cream or yogurt.
