Ingredients
  • 1 cup chocolate chips
  • 8 large marshmallows
  • graham crackers for dipping
Instructions
  1. Preheat the oven to 450.
  2. In a cast iron skillet, add the chocolate chips. Snip the large marshmallows in half and top the chocolate chips with them. (You could also use a scoop of mini marshmallows alternatively.)
  3. Once the oven is up to temperature, add the skillet to the oven. Bake for 7-9 minutes, or until the marshmallows turn golden brown.
  4. Serve with graham crackers for scooping.

Pizza Spaghetti Bake






Ingredients
  • 1 (12 oz.) box spaghetti (I used whole wheat)
  • 1 tsp. salt
  • 1 lb. mild pork sausage
  • 2 oz. (about 30 slices) turkey pepperoni, halved
  • 1 (26 oz.) jar basil & tomato pasta sauce
  • 1/4 c. grated Parmesan cheese
  • 1 (8 oz. ) package shredded Italian 5-cheese blend

Instructions
  1. Cook spaghetti, according to package directions, in water salted with the teaspoon of salt. Drain well and place in a lightly-greased 9x13" baking dish.
  2. Brown sausage in a skillet over medium-high heat, stirring occasionally, until cooked through and no longer pink. Drain and set aside. Wipe out skillet with a paper towel. Add pepperoni to skillet and cook over medium-high heat, stirring occasionally, until slightly crisp (about 4 minutes).
  3. Top spaghetti in the baking dish with sausage. Pour sauce over sausage. Arrange half of the pepperoni slices over the sauce; sprinkle evenly with cheeses. Arrange remaining pepperoni slices evenly over cheese.
  4. Bake at 350 degrees for 30 minutes. Cheese should be melted and just beginning to brown. If cheese is browning too much, cover with foil part way through baking.

Crockpot Chicken Noodle Soup






Ingredients
  • 1 1/2 cups carrots, chopped
  • 2 ribs celery, chopped
  • 1 medium cooking onion, peeled and sliced (in large pieces so picky eaters can easily pick them out)
  • 2 slices ginger (approx. 1/4 inch thick each), peeled
  • 2-3 stocks fresh rosemary
  • 8 boneless, skinless chicken thighs (I used a few more because the club-sized package was on sale)
  • 1 container low sodium chicken broth (approx: 900mL—if not using wine add additional broth)
  • 1 cup white wine (Optional but highly recommended)
  • Coarse salt and ground pepper to taste
  • 2 cups egg noodles

Instructions
  1. Spray crockpot with non-stick spray.
  2. Add carrots, celery, onion, ginger and rosemary.
  3. Arrange chicken on top of vegetables.
  4. Add broth, salt and pepper.
  5. Cook on low for 8 hours.
  6. Remove chicken, shred with two forks and put back into pot.
  7. Add noodles and cook on high for 20-30 minutes.
  8. Serve with biscuits or crusty bread!

Ingredients
  • 24 mini candy canes
  • 12 6″ lollipop sticks
  • 1 cup white candy coating
  • Sprinkles

Instructions
  1. Heat oven to 300 degrees. On a parchment lined baking sheet, arrange the candy canes as hearts with the lollipop stick centered in between the two candy canes. Bake for 3 minutes. You want them to be malleable, but not melted.
  2. Remove from oven & shape candy canes into hearts by pinching the the bottom of the heart into the stick and pinching the top ends together. I also pulled the edges out to make my hearts more round and full. They will be hot & you need to work fairly quickly. If the candy canes harden before you have them shaped, just stick them back in the oven for a couple of minutes. I re-heated mine a few times before I got the hang of shaping them the way I wanted them.
  3. Melt candy coating in the microwave at 30 second intervals on medium power, stirring between heating, until smooth.
  4. Spoon the melted candy coating into the center of each heart, then top with sprinkles. Cool the pops before serving or wrapping.


Bacon Guacamole Grilled Cheese Sandwich.





Ingredients
  • 2 slices bacon
  • 2 slices sour dough bread
  • 1 tablespoon butter, room temperature
  • 1/2 cup jack and cheddar cheese, shredded
  • 2 tablespoons guacamole, room temperature
  • 1 tablespoon tortilla chips, crumbled (optional)
Directions
  1. Cook the bacon until crispy and set aside on paper towels to drain.
  2. Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice of bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and finally top with the remaining slice of bread with the buttered side up.
  3. Grill over medium heat until golden brown and the cheese has melted, about 2-3 minutes per side.

Reese’s Peanut Butter Cup Cookie Bars





Ingredients
  • 1 white cake mix
  • 1/2 cup peanut butter
  • 1/4 cup canola oil
  • 1 egg
  • 1 cup peanut butter chips
  • 1 cups semi sweet chocolate chips
  • 1 cup Reese's Peanut Butter Cup Minis
  • 14 oz can sweetened condensed milk

Instructions
  1. Preheat oven to 350°F.
  2. Mix together the cake mix, peanut butter, canola oil and the egg.
  3. Press the mixture into the bottom of a 9×13 inch foil lined, greased pan.
  4. Top the crust with peanut butter chips, chocolate chips and peanut butter cup minis.
  5. Pour sweetened condensed milk over everything.
  6. Bake at 350°F for about 25 minutes.
  7. Allow the bars to cool completely before removing the foil and cutting them.

Ingredients
  • 2 medium zucchini (or 1 large)
  • pasta or rice
  • 2 tomatoes
  • 2 cloves garlic
  • 1 green peppers
  • 1 medium onion
  • chopped parsley
  • 50 gr grated Parmesan
  • salt and pepper
  • 200 ml chicken stock

Instructions
  1. Cut zucchini clean inside with a spoon and put salt in small amount. Boil pasta / rice and place a layer in zucchini.
  2. Chopped onion, peppers and tomatoes, then place them over pasta / rice. Sprinkle parmesan and chopped parsley.
  3. Pour broth into pan and place the zucchini. Put in the oven at 200 degrees for 45-50 minutes.
  4. Serve with sour cream or yogurt.

INGREDIENTS:
  • 1/2 cup Honey
  • 5 tablespoons Tamari
  • 1/2 to 1 teaspoon Sesame Oil
  • 4 tablespoons Sesame Seeds
  • 2 Garlic Cloves, pressed in a garlic press
  • 2 Egg Whites
  • 4 tablespoons Corn Starch
  • 3 medium sized Chicken Breasts, cubed into 1 inch pieces
  • Kosher Salt and Black Pepper
  • 1/2 Red Bell Pepper, diced
  • 1/2 Green Bell Pepper, diced
  • 1 medium Yellow Onion, diced
  • 4 Green Onion, sliced
  • 3 tablespoons Coconut Oil
  • 4 servings of Prepared White or Brown Rice
  • Consider adding a tablespoon of minced fresh ginger and/or a teaspoon of chili paste to the sesame sauce for a boost of flavor!
DIRECTIONS:
  1. In a medium bowl, combine honey, tamari, sesame oil, garlic and sesame seeds. Whisk until combined and set aside.
  2. Season cubed chicken with salt and pepper.
  3. In a large bowl whisk together the egg whites and corn starch. Add in the seasoned chicken and toss.
  4. In a large 10 to 12 inch non-stick skillet add a tablespoon of coconut oil and heat over medium-high heat. Once hot add in the peppers and onions and cook for 4-5 minutes until slightly softened. Remove to a plate.
  5. In the same skillet heat up 2 more tablespoons of coconut oil over medium-high heat. Add in the chicken and cook for 5-8 minutes until golden and fully cooked. Add the peppers and onions back in along with the sliced green onions and the sesame sauce.
  6. Stir and serve over prepared white or brown rice.

The Chew’s Baked Artichoke Chicken






Ingredients
  • 4 lbs. chicken legs and thighs, w/ skin (I used a chicken cut up, including breasts)
  • 1 cup artichoke hearts, halved (canned is fine)
  • 1 medium onion, cut into pieces same size as the artichokes
  • 1 pound white button mushrooms (halved or quartered)
  • 2 tablespoons brown mustard
  • 2-3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup red or white wine (you could also sub in chicken stock)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried tarragon
  • 1 bay leaf
  • kosher salt and pepper

Instructions
  1. Preheat oven to 350F-375F, depending if you like crispy skin or not.
  2. Place artichokes, onions and mushrooms on the bottom of a big pan.
  3. Place chicken pieces on top of the vegetables.
  4. Mix the mustard with the rest of the ingredients and pour over chicken.
  5. Season w/ kosher salt & pepper.
  6. Bake about 1 hour, basting the pieces once or twice.

Pepperoni Pizza Braid




Ingredients:
  • 1 can Pillsbury™ refrigerated classic pizza crust
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella and/or cheddar cheese, divided
  • 2/3 cup pepperoni slices, divided, plus more for topping
DIRECTIONS

  1. Heat oven to 425°F (400°F for a dark or nonstick baking sheet). Lightly grease a baking sheet with cooking spray.
  2. Unroll pizza crust and press into a 10-by-13-inch rectangle on prepared baking sheet. Use kitchen scissors or a knife to cut 8 equal strips along each of the two longer edges, leaving a 3-inch space down the center of the dough rectangle.
  3. Spoon pizza sauce along the center of the pizza dough, then sprinkle with 3/4 cup of the shredded cheese. Top with 1/3 cup of pepperoni slices, then sprinkle with another 3/4 cup shredded cheese and remaining 1/3 cup pepperonis.
  4. Starting from one end, fold strips of dough over the filling to the center, so the ends overlap and it looks braided. Sprinkle top with remaining cheese and a few more slices of pepperoni.
  5. Bake 20 minutes until crust is golden brown and baked through and cheese is melted and bubbly.

Simple One Hour Homemade Bread





Ingredients:
  • 5 1/4 cups white bread flour
  • 2 – 4 Tbsp. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 Tbsp. (rounded) saf-instant yeast
  • 1 1/2 Tbsp. oil
  • 2 cups warm water (somewhere between 100 and 115 degrees Fahrenheit)
Instructions:
  1. Mix dry ingredients. Add oil and water. Mix for 1 minute and then check the consistency of the dough. The dough should be very sticky. If it is too dry, add more water.
  2. Mix for 5 minutes. (Do not add any more flour after the dough has finished mixing.)
  3. Spray kneading surface with cooking spray and turn dough out onto surface. Knead dough briefly until it has a smooth even consistency (this will only take several turns of the dough to accomplish).
  4. Divide dough into 2 pieces (or more if you wish to have smaller loaves) and shape loaves into desired shapes and place on greased baking sheets. Cover with a large dish towel and let rise for 25 minutes.
  5. While loaves are rising, preheat oven to 350 degrees Fahrenheit. When loaves are ready to go into the oven, use a sharp knife (you can lightly spray your knife with cooking spray to prevent dragging) to make several slashes in the top. Make each cut about 1/4-inch deep at a 30 degree angle. Bake loaves for 25 minutes, or until they are golden brown.
